Corned Beef
Ingredients:
- 3 pounds corned beef
- 2 cups water
- 1 tablespoon garlic powder
- 1 bay leaf
Cooking Directions:
- Pour 2 cups water into a Presto pressure cooker.
- Position the cooking rack or steamer basket in cooker.
- Rub garlic powder into all surfaces of corned beef.
- Place corned beef on cooking rack or in steamer basket.
- Add bay leaf.
- Close cover securely.
- Place pressure regulator on vent pipe and cook 60 minutes at 15 pounds pressure, with pressure regulator rocking slowly.
- Let pressure drop of its own accord.
Note: If seasoning packet is provided with corned beef, use packet and omit bay leaf.
Makes 6 servings.
Variation: Corn Beef and Cabbage
- Cook above recipe for 55 minutes at 15 pounds pressure, with pressure regulator rocking slowly.
- Cool pressure cooker at once.
- Add the following ingredients to corn beef:
- 5 small potatoes
- 3 carrots
- cut into 1-inch pieces
and 1 lb. cabbage, cut into wedges (do not fill pressure cooker over 2/3 full).
- Close cover securely.
- Place pressure regulator on vent pipe.
- Cook 5 minutes.
- Cool pressure cooker at once.
Garden Veggie Pasta Salad
In very large bowl, use:
- 6 quart dutch oven mix
- 1 Lb. Cooked Veggie Pasta
- 2 Lg. Chopped Tomatoes
- 1/2 Head Fine Chopped Cauliflower
- 1 Lg. Fine Chopped Bell Pepper
- 3 Med. Fine Chopped Cucumbers
- 4 Stalks Fine Chopped Celery
- 1 Sm. Graded Onion
- 4 Lg. Graded Carrots
- 6 Hard Boiled Eggs
- 1 Lb. Diced Smoked Ham
- 1 Lb. Diced Cheese
- any other favorite veggies
In separate bowl mix:
- 2 tbs. Cider Vinegar
- 2 tbs. Mustard
- 2 C. Mayo
Salt, Pepper, Dill and any other favorite seasoning to taste.
add to other ingredients, and mix well.
As a main dish, Feeds my family of 6 for two days.
Irish Christmas Cookies
Ingredients:
- 1 cup Butter, softened
- 1 cup Granulated Sugar
- 3 Large Eggs
- 2 cups All-Purpose Flour
- 1/4 cup Irish Whiskey
- 1/4 cup Candied Citron, chopped
- 1/4 cup Golden Raisins, blanched and chopped
- 1/4 cup Almonds, chopped
Cooking Directions:
- Preheat oven to 375 F, and prepare 2 greased cookie sheets.
- In a small bowl, cream together the butter and sugar.
- Beat in the Eggs until well blended.
- Add the Flour and the Irish Whiskey, beat until smooth.
- Add fruit and nuts, and mix well.
- Drop Cookie dough from a tablespoon onto the prepared cookie sheets.
- bake each sheet of cookies for 8 - 10 minutes.
- Remove cookies from the cookie sheet with spatula while still warm. Place on wire rack to partially cool.
- Store in an air tight container with a slice of bread to maintain cookies soft fruity texture.
